INGREDIENTS
Crust
1 cup butter, softened
1/2 cup white sugar
2 cups
all-purpose flour
Topping
3/4 cup unsalted butter
2 baking apples, peeled, thinly sliced
3 eggs
3/4 cup sugar
1/3 cup plus 1 tablespoon all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons vanilla
1 teaspoon apple pie spice or cinnamon
Heat oven to 350°F. Lightly spray 13x9-inch pan or baking dish with cooking spray. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of pan. Bake 10 to 15 minutes or just until dough is set and light golden brown on edges. Set aside to cool.
Meanwhile, in 1-quart saucepan, melt 3/4 cup butter over medium heat. Once melted, cook butter about 5 minutes, stirring constantly, until butter turns a deep golden brown (which happens quickly, so don't walk away from it). Remove saucepan from heat; immediately pour butter into glass measuring cup. Set aside to cool slightly. While butter is cooling, place sliced apples in single layer over crust. Sprinkle apple pie spice
(or cinnamon) over apples.
In large bowl, beat remaining Topping ingredients with whisk until well blended. Gradually add brown butter, beating until smooth. Pour mixture evenly over apples. Bake 40 to 45 minutes or until deep golden brown and toothpick inserted in center comes out clean. Cool completely on cooling rack, about 1 hour. With sharp
knife, cut into squares.
OPTIONAL: Add a sprinkling of cinnamon and sugar to top of finished bars before cutting and serving OR drizzle melted caramel across the top!
